With Kyle here and Grouper season officially open, the plan is to head out and fish the Gulf.  They’ll head off shore to live bottom and use Pin Fish they caught as bait.  This fishing trip will be an all day event.  Success!  The end results produced Gag and Red Grouper with a few trout mixed in.  One of our favorite ways to cook fresh grouper is very simple.  Preheat Oven to 350 degrees. Melt 1 stick of butter in a baking dish and add  fresh minced garlic (to taste).  Add  seasoned Grouper filets (salt and peppered  to taste).  Bake  until fish is almost done and no longer transparent.  Sprinkle some seasoned bread crumbs over the top of your fish and add grated cheddar cheese.   Broil until fish is done  and cheese is melted.  Serve with fresh lemon and sour cream.  Delicious.  Hope you enjoy it  as much as we do.

We’ve found that the  high incoming tide seems to be the best bet for catching fish.  The water temperature is slightly cooler and the bite seems to pick up between six and eight in the evening.  We’re fishing the grassy flats from Buck Key to North Captiva Pass  for Trout and the potholes for Reds.  Still coming up short on the Reds, but bringing in a nice mess of fish between the three of us.
